Whether it's Greek Lemon Chicken, Chicken Francese, Chicken Piccata, or any other lemony sauce for your chicken you want a wine that has matching citrusy zip and zing: Sauvignon Blanc (or something like it) works best.
If you're not a Sauvy B fan, go for a medium bodied wine that has a lip-smacking quality and citrus or even tropical notes - solid bets include Verdicchio, Pinot Grigio, and Grillo. You want a brisk wine whose acidity matches the lemon's peppy kick.
If red wine is your preference, stick to one that has lower tannins and bright acidity, like Pinot Noir, and throw a sage leaf or two into the meal prep to make the dish more red-wine friendly.
